Raw champignon salads: healthy recipes

Champignons - a tasty and healthy product that can be eaten in any form. These mushrooms are eaten fried, stewed, boiled, they are frozen, dried, in addition, this product can even be eaten raw. In addition to the fact that, with proper preparation, raw champignons turn out to be very tasty, they are also useful, since they retain all the beneficial properties.

One of the dishes when this popular product is used in thermally unprocessed form is a salad with raw champignons, which can be prepared according to many recipes.

Salad with raw champignons and Peking cabbage

To prepare an appetizer for this recipe, prepare the following components:

  • raw champignons - 200 g;
  • Chinese cabbage - 200 g;
  • white onion - 1 pc.;
  • a couple of stalks of green onions;
  • parsley;
  • two cloves of garlic;
  • 3 tbsp. l soy sauce;
  • 2 tbsp olive oil;
  • 2 tbsp lemon juice;
  • salt pepper.

Prepare a raw champignon salad according to this recipe:

  1. Wash fresh mushrooms, peel and cut into plates.
  2. In one bowl, combine the ingredients of the dish such as soy sauce, lemon juice, olive oil, salt, pepper and chopped garlic cloves. Pour chopped mushrooms with the mixture. Leave them in the refrigerator for 2 hours. Stir this mass periodically so that all the mushroom plates are well saturated with the cooked sauce.
  3. Peking cabbage finely chop with a knife, add to the pickled mushrooms.
  4. Cut the onion into cubes or half rings, chop the greens with a knife. Add these ingredients to the salad before serving.

Mushroom salad with raw champignons and parmesan

To prepare a delicious salad with raw champignons and Parmesan cheese, you will need the following components:

  • raw champignons - 300 g;
  • arugula - ½ bunch;
  • Parmesan - 2 tbsp. l in grated form;
  • cherry tomatoes - 100 g;
  • a bunch of green onions;
  • olive oil - 2 tbsp .;
  • 2 cloves of garlic;
  • honey - 1 tsp;
  • chili sauce;
  • lemon juice;
  • pepper, salt.

Prepare a salad with raw champignons and cheese according to this recipe with a step by step photo:

Peel the mushrooms, wash. Cut into thin plates, sprinkle them with lemon juice, so as not to darken.


Wash the arugula and onions under running water and dry.


Prepare a salad dressing, combine in one container lemon juice, olive oil, chopped garlic, honey, chili sauce, salt and pepper.

  • 200 grams of raw champignons;
  • 2 medium sized tomatoes;
  • ½ bunch parsley;
  • sesame seeds - 3 tsp

For refueling:

  • 50 ml of soy sauce;
  • 1 tsp balsamic vinegar;
  • ½ tsp coriander;
  • 2 cloves of garlic;
  • 0.5 tsp sugar and black pepper;
  • 1 tbsp. l vegetable oil.

Salad with raw champignons and tomatoes is prepared in the following way:

  1. Washed and peeled fresh mushrooms cut into small slices.
  2. Wash the parsley, slightly dry from moisture and chop finely with a knife. Combine these two components of the salad in one bowl, mix.
  3. At the next stage, the sauce is prepared, for this it is enough to mix all the components necessary for preparing the dressing in one container.
  4. Pour mushrooms with parsley sauce and leave to marinate for 15 minutes.
  5. After the specified time, decorate the salad with thinly sliced ​​circles of tomatoes.
  6. Before serving, sprinkle salad with sesame seeds.

Raw Food Mushroom Salad with Soy Sauce

This raw champignon salad with soy sauce is perfect for vegetarians. To prepare it you will need:

  • bell pepper;
  • tomatoes - 2 pcs.;
  • two fresh cucumbers;
  • 3 tbsp. l soy sauce;
  • 200 grams of raw champignons;
  • a bunch of green onions;
  • white cabbage - 200 g;
  • clove of garlic;
  • 2 tbsp. l olive oil;
  • 1 tsp lemon juice;
  • salt pepper.

Prepare this chic salad with raw champignons called Ro Food in this way:

  1. Finely chop the cabbage, salt, gently crush with your hands for juiciness.
  2. Cut cucumbers into half rings, tomatoes into cubes.
  3. Remove the seeds from the bell pepper and cut the vegetable with a long thin straw.
  4. Slice washed and peeled champignons.
  5. Wash the green onions, shake off the remaining water and chop finely with a knife.
  6. Combine all the components of the salad in a deep salad bowl, mix, pour over the sauce. Prepare the sauce from lemon juice, soy sauce and olive oil. If desired, add a pinch of black pepper to the sauce, but you can do without it.

Mushroom raw mushroom salad with cucumber

Raw champignons go well with any vegetables, you can prepare a salad based on these mushrooms and fresh cucumbers. To prepare it you will need:

  • raw champignons - 300 g;
  • 2 cucumbers and tomatoes;
  • lemon juice - 3 tbsp ;;
  • pepper, salt;
  • sunflower oil - 70 ml;
  • 1 tsp mustard.

Raw champignon salad with cucumber is prepared according to this recipe:

  1. Mushrooms are pre-washed, cleaned and cut with plates. Sprinkle with lemon juice so that they do not lose their color.
  2. Cut washed cucumbers in half rings, tomatoes in quarters.
  3. Place all the components of the salad in one bowl, mix.
  4. Prepare dressing: mix salt, pepper, mustard and sunflower oil, mix and pour the vegetables. Mix the salad well and immediately serve on the table in order to avoid excessive allocation of juice by vegetables.

Raw champignon salad with chicken and walnuts

You will need:

  • chicken fillet - 300 g;
  • raw champignons - 200 g;
  • peeled walnuts - 50 g;
  • lettuce leaves - 2 pcs.;
  • canned pineapples - 1 can;
  • 1 tbsp. l olive oil and soy sauce;
  • 2 tbsp. l lemon juice;
  • 0.5 tsp each mustard, salt and sugar;
  • clove of garlic;
  • one chicken egg;
  • half a glass of sour cream.

Prepare a salad with raw champignons and chicken in the following way:

  1. First of all, prepare a salad dressing so that it is well infused while you are preparing a snack. To do this, mix the egg, mustard, salt, olive oil in a blender. It is not necessary to pour olive oil all at once, but to add it gradually.
  2. When these components of the sauce are whipped on a blender, add lemon juice, soy sauce, chopped garlic and sour cream to the mass.
  3. Put the finished dressing in the refrigerator, and in the meantime proceed with the preparation of the salad.
  4. Prepared chicken fillet - peeled, peeled and bone free, put in boiled salted water. Cook the fillet until cooked.
  5. Dry the walnuts in a pan.
  6. Peel the mushrooms, wash, dry with a towel and cut into small slices.
  7. Wash the green lettuce leaves, dry and tear into pieces with your hands.
  8. Put the torn lettuce leaves in the center of a large flat dish, on top of them place the boiled chicken fillet, also cut into small cubes.

  10. Open a can of pineapples, drain the liquid from them and put the fruit on the salad.

Raw champignon mushroom salad with tongue

This dish will be a good option for a festive table. To prepare such an appetizer, you will need:

  • boiled tongue - 1 pc.;
  • boiled eggs - 4 pieces;
  • pickles - 4 pieces;
  • raw champignons - 100 g;
  • lemon juice - 2 tbsp. l .;
  • greens - to your taste;
  • mayonnaise - for dressing.

Prepare a salad with raw champignons and tongue according to this recipe as follows:

  1. Peel the boiled tongue from a thin skin, and cut into strips.
  2. Cut the cucumbers into small strips.
  3. Dice the eggs.
  4. Peel the mushrooms, wash and chop thin plates, sprinkle them with lemon juice and salt.
  5. Combine all the components of the dish in a salad bowl, season with mayonnaise and mix well.
