Home-made pie with mushrooms and onions in the oven

For the test:
- 1 kg of potatoes
- 5 eggs
- salt.
For filling:
- 1 kg of mushrooms (any, fresh),
- 60 g flour
- 200 g onions,
- 100 g sour cream
- 50 g butter,
- 5 eggs
- 100 g breadcrumbs.
Cooking method.
Cooking toppings. Peel fresh mushrooms, wash, finely chop. Peel the onion, fry in vegetable oil, mix with mushrooms, salt and pepper.
Simmer the whole mass over low heat with constant stirring. When the mushrooms let the juice, add sour cream, flour. Cool.
Peel, rinse, boil the potatoes in slightly salted water, put them in a colander and wipe them hot through a sieve or pass through a meat grinder. Pour the whipped eggs into the mashed potatoes. Stir well. Divide the entire mass into two parts. Put one part in a greased form, on top a layer of mushroom minced, sprinkled with breadcrumbs. From the second part, mold the grate and close the pie with it. Lubricate the surface with an egg. Put the mold in a very hot oven and bake a potato pie for about half an hour.
Pie with onions, eggs and mushrooms
For the test:
- 250 g flour
- an incomplete glass of warm water or milk,
- 20 g of yeast
- ½ teaspoon of salt
- 3 tbsp. tablespoons of vegetable oil or melted margarine.
For filling:
- 400 g of salted mushrooms,
- 40 g butter,
- 1 onion,
- 1-2 large eggs,
- 2 tbsp. spoons of sour cream
- 2-3 tbsp. tablespoons of boiled rice,
- pepper,
- chopped greens of dill or parsley.
Before you make a pie with onions, eggs and mushrooms, you need to make the dough: mix the yeast with a warm liquid, add salt, butter and flour, knead and put in a warm place to rise. When suitable, roll a ball out of it, then a round cake, which is transferred to a greased form. The pellet should be large enough and cover the edges of the mold or pan so that it is higher than the filling. Grease the dough with vegetable oil and lay the filling evenly.
For the filling, rinse the mushrooms in cold water and chop finely. Simmer in oil with chopped onion, add sour cream, rice and chopped eggs. Season with salt and pepper.
After proofing, bake a pie in the oven with medium heat for 30–35 minutes.
Pie with leek and mushrooms
For the test:
- 2½ cups flour
- 30-40 g of yeast,
- ½ cup water
- 200 g butter or margarine,
- 1 egg
- 1 tbsp. a spoonful of sugar
- 2 tbsp. tablespoons of cream
- 1 glass of vodka
For filling:
- 400 g leek,
- 100 g of dill,
- 5 eggs
- 100 g cream
- champignons or porcini mushrooms,
- ground pepper and salt to taste.
Cooking a pie with leek and mushrooms is necessary in two stages: the dough and the filling. Chop leek and dill, add hard-boiled chopped eggs, finely chopped boiled or fried mushrooms, cream, season with salt and pepper.
Prepare a gingerless yeast dough. Make the cake open with a binding of strips of dough, beautifully sliced, or closed with a cooled filling. The surface of the closed cake must be chopped with a fork in several places, allowed to rise well before baking, and greased with beaten eggs, if desired. The finished cake can be greased with melted butter and served hot to the broth or tea.
Transfer the finished pie to a dish, pour a little mushroom broth on the filling and serve. The surface of the pie before baking can be greased with an egg or a hot pie, removed from the oven, greased with melted butter.
Layer cake with meat and mushrooms
The basis: Puff pastry.
For filling:
- 400 g lean pork
- 300 g of mushrooms
- 100 g of grated cheese,
- 1½ cups sugar
- 2-3 peeled tomatoes
- salt,
- parsley greens.
Cook the puff pastry. You can also prepare a layer cake with mushrooms and onions based on purchased dough. Grind the meat in a meat grinder, simmer in the fat until half-cooked, sprinkle lightly with flour. Peel the mushrooms, boil for 5-10 minutes, put in a colander, chop and simmer with meat. At the end, add grated tomatoes, cheese and chopped parsley.
Lubricate a square baking sheet with oil, lay a prepared layer of dough on it and evenly distribute the filling layer. Cover with the remaining dough, rolling it slightly thinner than the bottom layer.
Bake the cake in a medium-heated oven.
Another layer cake with mushrooms.
Ingredients:
- Puff pastry 2 layers
- Champignons 700 g
- Cream 200 ml
- Butter 20 g
- Egg yolk 1 pc.
- Garlic 1 clove
- Parsley a few twigs
- Salt, pepper to taste
Cooking method:
Pancake pie with mushrooms, onions and cheese
In order to prepare a pancake pie with mushrooms, onions and cheese, you need to take:
- - 10–12 thin (or 7–8 thick, from yeast dough) pancakes
- - 1 kg of champignons
- - 300 g of cheese
- - 300-400 g of onions
- - 2 eggs
- - 3 cloves of garlic
- - 120 ml of vegetable oil
- - 250 g mayonnaise
- - salt
- - pepper to taste
Preparation of minced meat: chop the mushrooms and fry with onions in vegetable oil. Remove from heat, add raw eggs, grated garlic, salt, pepper and mix well.
Grease pancakes with mayonnaise and transfer to mushroom forcemeat and grated cheese in the form of a layer cake (pancake, mushroom forcemeat, grated cheese, pancake). Top the pie with mayonnaise and sprinkle with grated cheese.
Put in a hot oven for 15 minutes (or in the microwave for 5-7 minutes).
Before serving, decorate with whole boiled, pickled small champignons and herbs.
Pie with mushrooms and green onions
For the test:
- - 200 g flour
- - 130 g of oil
- - 1 pinch of salt
- - 1 egg yolk
For filling:
- - 750 g of champignons
- - 3 tbsp. tablespoons butter
- - 150 g of ham
- - 1 bunch of green onions
- - 150 g sour cream (or mayonnaise)
- - 1 tbsp. a spoonful of finely chopped parsley
- - salt
- - ground white pepper
- In order to make a pie with mushrooms and green onions, you need to knead the dough from these ingredients and put it in the refrigerator for 30 minutes.
- Cut champignons into thick slices. 2 tbsp. melt the tablespoons of butter in a large pan and fry the mushrooms on it until all the liquid from them has evaporated.
- Grind the ham into cubes. Wash and finely chop the green onions.
- In a saucepan, heat the ham with the remaining oil. Add onion, simmer for 3-4 minutes.
- Lubricate the mold with butter and put two-thirds of the dough on the bottom of the mold. Roll out the remaining dough into a thin tourniquet and let it go along the edge of the mold.
- Pierce the dough with a fork in several places and put in the oven for 20–25 minutes (at a temperature of 160–180 ° C).
- Mix chilled mushrooms and ham with onions with sour cream, season with salt and pepper. Remove the semi-finished dough from the oven and spread the mushroom mass on it. Bake the cake until cooked for 15–20 minutes at the same temperature.
- Sprinkle with parsley and serve.
If sprinkled with grated cheese from hard varieties 3-5 minutes before the cake is ready, the cake will have a more acute taste.
French pie with onions and mushrooms
The ingredients for a French pie with onions and mushrooms are these products:
- Flour (premium) - 200 g
- Butter (for dough 125 g + for frying 2 tbsp) - 125 g
- Vegetable oil (for dough) - 20 g
- Salt (pinch, for dough)
- Champignons (frozen) - 400 g
- Onion - 2 pcs.
- Egg - 3 pcs.
- Cream (any fat content) - 300 ml
- Salt (pinch to taste)
- Black pepper (pinch)
Recipe.
- In the sifted flour we make a hole, into it we throw slices, soft butter and pour in vegetable oil. Knead the dough.
- In a frying pan we heat the butter, pour the mushrooms. I have 400 grams declared, but more is possible - this is an amateur. As soon as the mushrooms give water I pour it, just on top, chopped onion. I close the lid and hold until the water evaporates. Next, stir fry until cooked.
- Preheat the oven to 200 degrees.
- We cover the form (ideally with a diameter of 30 cm round) with a dough. We prick the bottom with a fork.
- Put in the oven for 10 minutes. Until half ready.
- Beat eggs with cream. Combine with fried mushrooms.
- Pour the omelet with mushrooms into the mold and put in the oven until tender, for about 30-45 minutes.
- Garnish the finished pie with parsley.
- Serve hot.
Buckwheat pie with mushrooms.
Structure:
- flour - 1-1.2 kg
- warm water - 2 glasses,
- vegetable oil - 1 cup,
- yeast - 50 g
- salt - 1 tsp;
For filling:
- buckwheat groats (core) - 500 g,
- dried mushrooms - 50 g,
- onions - 3 pcs.,
- salt;
for frying:
- vegetable oil - 100 g;
- To grease the cake before baking:
- strong tea - 2 tbsp. l .;
after baking:
- vegetable oil - 2 tbsp. l ..
Dissolve yeast in half a glass of warm water. Knead the lenten yeast dough, cover with a canvas napkin, put in a warm place for fermentation, do a twinkle twice. Divide the dough into two parts. Roll out a 1-cm-thick layer, transfer it to a greased baking sheet on a rolling pin, straighten the dough, flatten, smooth with your hands, chop with a fork, put the buckwheat porridge stuffed with mushrooms in an even layer.
Prepare the filling as follows: dried buckwheat groats are dried in a pan, pour into a clay pot, pour boiling water over it, close the lid, put in a hot oven and bake porridge reddened so that the porridge is “a grain from a grain”.
Soak dry mushrooms for 2-4 hours in cold water, boil until tender in the same water. Mushroom readiness is defined as follows: if the mushrooms sank to the bottom, then boiled. Throw boiled mushrooms into a colander, rinse thoroughly under a stream of cold water, cut into noodles or chop, fry in vegetable oil. Separately, fry finely chopped onions. Combine buckwheat porridge, mushrooms, onions, season with salt, add the mushroom broth filtered through four layers of gauze for juiciness and wrap the filling in the pie.
The “lid” for the pie should be rolled thinner, about 0.7-0.8 cm, transferred to the rolling pin, unfold, smooth out with your hands, gently tuck the seam, bend it down. Prick with a fork so that steam comes out during baking, and brush with strong tea using a brush.
Bake the cake until cooked at 180 ° C. After baking, grease the pie with vegetable oil, cut into portions, put on a beautiful dish and serve hot.
