Oven baked potato with mushrooms

The main advantages of cooking potatoes with mushrooms in the foil in the oven is that the juice secreted by the ingredients does not evaporate, so the loss of nutrients is minimal. In addition, with this method of baking, the aromatic properties of the products are better preserved. When preparing potatoes with mushrooms in foil, do not forget that you need to wrap all the components as tight as possible, otherwise the juice will flow out and start to burn, and the dish itself will turn out to be tough.

How to bake potatoes with mushrooms in foil

Recipe number 1

Ingredients:

  • Potato - 1 kg
  • mushrooms (any) - 0.5 kg
  • onions - 1-2 pcs.
  • cream or sour cream (10%) - 200-300 ml
  • flour - 2-3 tbsp. l
  • vegetable oil to taste
  • garlic - a few cloves
  • greens (dill, parsley) - 1 bunch
  • marjoram - 1 tsp.
  • Provencal herbs - 1 tsp.
  • Salt to taste
  • Pepper to taste

Cooking:

Cut the peeled potatoes into small pieces.

Cut onions - it is better to do this in large half rings so that it does not burn out during frying.

Fry mushrooms with onions in vegetable oil (until half-cooked!), Add flour at the end and, thoroughly mixing, fry everything together for another 5 minutes.

Grease a deep pan with vegetable oil, put chopped potatoes here, and on top - mushrooms with onions.

Pour all the cream or sour cream mixed with marjoram and Provence herbs, salt, pepper and put in the oven.

Bake over low heat until the potatoes are cooked.

During cooking, mix the contents of the pan several times. You should also try to see if there is enough salt. If not enough - add.

When the dish is ready, turn off the oven, cover the baking sheet with foil, and let it brew in this form for some time (15-20 minutes).

Finely chop the garlic, chop the herbs.

After removing the foil from the baking sheet, generously sprinkle the dish with garlic and then herbs.

2 kg of potatoes, 500 g of fresh mushrooms, 2 onions, 2 slices of loaf, 1 egg, vegetable oil, salt, pepper

To prepare this dish, baked under a foil with mushrooms, boil the potatoes in their uniforms, peel, cut off the tops and bottom (to give stability), carefully take out part of the pulp, leaving walls 1 cm thick. Boil the mushrooms in salted water, remove from the broth, cut in small pieces. Finely chop the onion, fry in oil. Add mushrooms, fry for 5-7 minutes. Remove from heat, cool. Soak slices of loaf in water, squeeze, add to onion and mushroom mass. Beat in egg, salt, pepper and mix thoroughly. Fill potatoes with the prepared mass, cover with cut tops, wrap in foil, place on a baking sheet and bake in a preheated oven for 15 minutes. Before serving potatoes with mushrooms, baked in the oven, remove the foil, sprinkle the dish with herbs.

  • Boneless beef or pork - about 1 kilogram;
  • Onions - 2 heads;
  • Potatoes - about 1.5 kilograms;
  • Champignons or oyster mushrooms - 500 grams;
  • Hard cheese - 300 grams;
  • Mayonnaise - 250 grams;
  • Ground black pepper - about 0.5 teaspoon;
  • Lyuba ready seasoning for frying meat - about 1 tablespoon;
  • Salt - 3-4 pinches;
  • Vegetable oil - 2 tablespoons.

First, prepare the meat, cut it into pieces. I usually cut into cubes, about two or three centimeters, sprinkle with seasoning for frying meat, mix everything thoroughly, cover, let it insist. Then wash and peel all vegetables. Chop onions finely enough, as for making soup. It is better to chop the potato into thin circles or long whetstones. Mushrooms cut into plates.

Put the oven to heat up to 180-200 degrees. Pour vegetable oil onto a dry, clean baking sheet and carefully lubricate the bottom and walls of the mold with it. Stir the meat again and spread evenly on a baking sheet. Spread the meat.

If the seasoning was without adding salt, then a little salt, literally a couple of pinches - this is quite enough. Sprinkle a little onion. The next layer is potatoes, which we spread on meat pieces. Then again sprinkle with onions, half black pepper and the remaining salt. You can sprinkle quite a bit with some seasoning, for example, ground basil or coriander. We spread the potatoes.

Now it's the mushroom's turn. We spread them so that evenly cover the entire surface of the potato layer. Level the mushroom plates with your hands, it is necessary that they all lie horizontally, sprinkle with the remaining pepper. Spread the mushrooms

Grate the cheese, it is not necessary to finely chop it, but you can cut it into thin slices with a knife and then cut them into strips.

Layer of mayonnaise. Grease the mushrooms with mayonnaise, sprinkle with cheese chips, lightly press it to the surface with a spoon or knife.

A layer of cheese. Cover the pan with a sheet of foil so that there are no gaps or crevices. This must be done very carefully so that the foil does not touch the cheese. If there is some kind of lid, then you can cover it. Put in the middle of the oven and bake.

About thirty minutes later, you can remove the foil and continue to cook without it. Usually, the right amount of water accumulates at the bottom and therefore the potatoes are quite soft. If the dish is completely dry, then you can add a little water or broth and bake for another fifteen minutes. By this time, the cheese is completely melted and browned. The total time for cooking potatoes with meat and mushrooms in the foil takes about 50 minutes.

  • Chop beef 250 g
  • 3pcs potatoes.
  • Sour cream 1 tbsp (25 g)
  • Mustard 1 tsp (12 g)
  • Tomato 1 tbsp
  • Dried oregano 1/2 tsp
  • Tomato 1 pc. (100 g)
  • Fresh champignons 3 pcs. (75 g)
  • Onion 1 pc. (120 g)
  • Hard cheese 100 g
  • Vegetable oil for lubrication 1 tbsp (17 g)
  • Salt pepper

Cut the meat into 3 parts in portions or into slices as for chops, washing the resulting pieces. You can also cook marinade, pickled meat will be much tastier, but if you do not know how to marinate it correctly, then follow the steps of the recipe. For the dish, chicken, turkey or pork meat is suitable.

Mix sour cream, tomato, mustard, oregano and 1/3 teaspoon of salt (or to taste). Meat from 2 sides with pepper, salt and grease with the resulting marinade. We send meat to the refrigerator for at least 2 hours.

Peel the potatoes and cut them into cubes. We cut the peeled onions into quarters, and the pure tomato in circles. Wash the mushrooms carefully and cut into plates.

We cut the foil in such a way that it was possible to lay meat on it and cover it. Lubricate the part of the foil, which is located at the bottom of the mold with oil. Put the beef on it. Each piece should lie close to each other. Put potatoes on top. On top of the potatoes spread in layers: onion, mushrooms and tomato.

We turn on the oven, the temperature is 190 degrees.

Wrap the meat with foil and send it to the oven, baking, time and cooking will take 45 minutes.

We get the form with beef, open the top of the foil, put the grated cheese on a coarse grater into tomato circles. Put in the oven for another 12 minutes.

Oven baked potato with chicken and mushrooms


  • Potato 1 kilogram
  • Chicken meat 500 grams
  • Mushrooms (preferably champignons) 100 grams
  • Green onion 2 bunches
  • Sunflower oil 100 milliliters
  • Ground black pepper to taste
  • Caraway to taste
  • Ground paprika to taste
  • Salt to taste

To prepare this dish, baked with mushrooms in a foil, rinse the potatoes, removing dirt and sand, peel them and remove all eyes with the tip of a knife. Rinse the vegetables with water again. Cut the peeled potatoes into slices, slices or straws. Do not grind the main thing, make pieces of medium thickness. Dry the chopped potatoes with disposable paper towels.

Rinse the meat. Dry with a towel and cut into small pieces. Put the chopped meat in a deep plate, sprinkle it with salt and spices, and then mix well, roll each seasoning in seasonings.

Rinse the mushrooms, cut into thin slices.

Cover the baking sheet with foil, leaving the sides with excess edges large enough so that they can be wrapped inward. Put the pieces of potatoes on the foil, then the meat, mushrooms, sprinkle everything with finely chopped green onions and mix. Add vegetable oil and mix again.

Put the oven to heat up to 180-200 degrees Celsius. At the same time, wrap the edges of the foil inward, tightly sealing the meat with potatoes and mushrooms inside.

Place the baking sheet in a preheated oven. Bake everything for 1.5-2 hours, depending on the oven. To be sure, after 60 minutes, carefully open the foil and see if the meat is baked, the potato has become loose, and the mushrooms are ready. If not, wrap potatoes with chicken and mushrooms back in foil and continue to bake.
