Among the many recipes for mushroom cuisine, a special place is occupied by cabbage dishes with potatoes and mushrooms: these ingredients can be used both for preparing hearty first and second courses for a family dinner. Below are recipes for stewing cabbage with mushrooms and potatoes, or making delicious casserole, soup and cabbage soup from these ingredients.

Vegetable stew recipes with cabbage, potatoes and mushrooms

Braised cabbage with potatoes and mushrooms

Ingredients:

  • Cabbage - 1 head
  • Potatoes - 5-6 pieces
  • Carrots - 2 pieces
  • Onions - 1 piece
  • Mushrooms - 200-300 grams
  • Ground black pepper to taste
  • Salt to taste
  • Tomato paste - 1-2 tablespoons
  • Purified water (boiled) - 0.5–1 cup

To cook the cabbage stewed with mushrooms and potatoes, put the pan on a high heat and heat a little vegetable oil in it. Put slices of potatoes and fry them until golden brown. Be careful not to turn over the contents of the pan until you are sure that a crust has already appeared on the underside.

When the potatoes are fried, reduce the heat to medium. And then add onions, mushrooms and carrots to the same pan. Fry everything until the ingredients change color.

And the last thing we add is cabbage, but not all at once. First half, wait until it is extinguished and settles, and only then pour the second part. Add salt and pepper to taste. And while the cabbage is stewed a little, boil water and pour into a mug, now it is necessary to dissolve the tomato paste in it. To do this, add the ingredient to the water and quickly mix it with a tablespoon. After this mixture must be added to the vegetables, reduce the heat even more and cover the pan. Stew the vegetables in tomato paste until fully cooked, on average it takes another 20-30 minutes. Once the potatoes and cabbage are softened, you can turn off the heat and serve the finished dish on the table.

Porcini stew

Ingredients:

  • 100 g dried porcini mushrooms,
  • 300 g sauerkraut,
  • 200 g of potatoes
  • 100 g carrots
  • 1 onion,
  • 0.5 kg squash
  • 30 g parsley root,
  • 50 g sour cream
  • 2 tablespoons of vegetable oil,
  • 1 tablespoon of tomato paste,
  • 1 tablespoon flour
  • Bay leaf,
  • parsley
  • ground black pepper,
  • salt.

Cooking method:

Rinse the mushrooms, pour cold water and leave for 2-3 hours. Then put on fire and boil. Strain the resulting broth, and cut the mushrooms into strips.

Peel, chop, and lightly fry the onions in warmed vegetable oil. Then add peeled and grated carrots and parsley root and sauté for 2-3 minutes.

Rinse the cabbage, squeeze lightly, put in a pan with vegetables, add mushrooms, tomato paste, bay leaf and stew. Wash, peel, cut the potatoes into small pieces, put in boiling mushroom broth and cook for 20 minutes. Cut the zucchini into small cubes, add to the broth. Then add the stewed vegetables, salt, pepper and bring to readiness.

Spread the cabbage with mushrooms and potatoes prepared according to this recipe and place them on portioned plates, sprinkle with finely chopped parsley and season with sour cream.

Potato casserole with cabbage and mushrooms

Ingredients:

  • Potatoes - 6-7 large,

  • White cabbage - 200g,

  • Cheese - 100 gr

Peel and boil the potatoes not until fully cooked, about 5-7 minutes. Fry the mushrooms, add onions, salt, pepper, shredded cabbage.

Cut potatoes into medium-sized pieces, fry (without salting) until a delicious crust forms. Shred a quarter of a cabbage. Sauté in oil until cabbage is softer. We put processed components into the container. On top lay out, chopped with long stripes, bell pepper.

In the water boiling in the pan, we bring a little tomato paste (sauce, thick juice), pour sugar, add salt. Lazy dish with cabbage and mushrooms

Structure: 100 g of salted mushrooms or 30 g of dried mushrooms, 500 g of sauerkraut, 100 g of potatoes, 200 g of pork, 2 onions, salt.

Ingredients:

  • 50 g canned green peas,

  • 10 g of olives

  • 50 g sour cream
  • ½ lemon

  • salt.

Cooking method:

Rinse the mushrooms, pour cold water and leave for 2-3 hours. Then put on fire and boil, after which strain the broth.

Cut the mushrooms into strips, lightly fry in a small amount of butter, add tomato paste and simmer for 2-3 minutes.

Cut the cabbage into strips, put in a saucepan and put on fire.

Wash, peel, chop the potatoes, put in a pot with cabbage, in a boiling broth, add the prepared mushrooms and cook for 20 minutes.

Peel the cucumbers, remove the seeds, cut into cubes, pour over boiling water and also put in the pan.

Fresh cabbage soup with dried mushrooms

Structure: 100 g of dried mushrooms, a small fork of cabbage, 2 potatoes, 1 parsley root, 1 celery root, 1 carrot, 2 onions, 5 tbsp. l butter, 2 tbsp. l flour, salt.

Wash dried mushrooms and put in water for 3-4 hours, then remove the mushrooms and chop. Strain the water in which they were soaked. Peel and cut potatoes into slices, chop cabbage. Peel and chop onions and carrots. Carrots can also be grated. Slice the roots of parsley and celery. In a slow cooker in the "Frying" or "Baking" mode, dissolve the oil and fry the flour in it while stirring until golden brown. If desired, you can add onions and carrots and fry for 10 minutes with the lid open, stirring occasionally. And you can not do the frying, but, in a dietary version, cook onions and carrots. After frying, lay the chopped potatoes, cabbage, mushrooms, parsley and celery roots, as well as onions and carrots in the slow cooker, if they were not fried. Pour in mushroom water, salt and add bay leaf and other spices, if desired. Set the “Soup” mode for 40 minutes.
