Preparation: Rinse rutabaga, bake in the oven, peel. In each root crop, make a recess so that the wall thickness is 1-1.5 cm. Finely chopped out swede. Mushrooms are placed in a serving on zucchini stewed in sour cream, on top of them are fried tomatoes, sprinkle everything with finely chopped parsley.

Black breast in sour cream

Ingredients for 5-6 servings:

  • 0.5 kg of chicken pulp
  • slice of white bread
  • 1/2 cup milk
  • 5-8 black breasts
  • 2 tablespoons sour cream
  • 2 tablespoons of oil.

Cooking black loaf in sour cream: cut the pulp from the carcass, pass 2 times through a meat grinder with white bread soaked in milk, salt and stir. Peel, rinse thoroughly and finely chop fresh white mushrooms, put them in a bowl, close the lid, put on low heat and simmer. After 15-20 minutes add sour cream or thick milk sauce and salt. Simmer until cooked for another 25-30 minutes, then cool. Cut the minced meat in the form of small cakes, put a tablespoon of mushrooms in the middle of each. Connect the edges, roll the tortillas in ground breadcrumbs and fry in a well-heated pan with butter or ghee. Garnish well with green peas.

Stewed mushrooms in puff pastry with sour cream

Ingredients:

  • 350-400 g puff pastry
  • 100 g dried mushrooms
  • 120 g onion
  • 100 g hard cheese
  • 1 egg
  • 30–35 g butter
  • 10 g flour
  • mushroom broth
  • salt and pepper to taste

To cook stewed mushrooms in puff pastry with sour cream, roll the dough into a 5 mm thick layer, put it in a mold, pierce it with a fork, pour a layer of peas on top and bake in a preheated oven for 10-15 minutes. Then remove the peas. Rinse the mushrooms, pour cold water, leave for 2-3 hours. Boil in the same water, put in a colander so that the glass of water passes through a meat grinder. Peel the onions, finely chop and fry with mushrooms in oil over low heat for 10-15 minutes. Pour flour, pour mushroom broth, simmer until thickened.Hard-boiled egg, peel, chop finely, add to mushrooms. Salt, pepper, mix well. Put the filling on the baked cake, sprinkle with grated cheese. Bake the cake in the oven at a temperature of 180-200 ° C until cooked.

Cooking dough. Creamy puff pastry differs from the usual, more complex composition. For its preparation, 0.5 parts of butter and 0.4 parts of sour cream are taken per 1 part by weight of flour. Also in the dough add 0.5 tsp. baking powder, which is first mixed with 0.25 tsp. salt and only then pour into flour. Next, chilled butter chopped into pieces is added to the flour. They continue to chop it with flour, then add sour cream and knead the dough. A ball is then formed from it, covered with a damp cloth and cooled in the refrigerator.

Fish with sour cream and mushroom sauce.

Ingredients:

  • 380 g canned fish (sardines, saury, etc.)
  • 300 g fresh black mushrooms
  • 200 g sour cream
  • 100 g cheese
  • 3 potato tubers
  • 1 egg
  • 5 tbsp. l vegetable oil
  • 2 tbsp. l wheat flour
  • dill greens
  • salt

Peel, wash, chop, and fry the mushrooms in 2 tbsp. l vegetable oil. Peel potatoes, wash, cut into slices and fry also at 2 tbsp. l vegetable oil. Hard-boiled egg, cool, peel and cut into thin slices. Put potatoes on a frying pan greased with vegetable oil, distribute canned fish to it, first drain the oil from it, then lay the fried mushrooms, slices of boiled egg. Pour the sauce over the dish, to prepare which combine the fish oil, sour cream and flour, salt and boil for 5 minutes. Sprinkle with grated cheese and bake in the oven until cooked. When serving, sprinkle fish in a sauce with carefully washed and finely chopped dill.
