Ingredients:
350 g of beef liver, 250 g of champignons, 100 g of chopped fresh or freshly frozen spinach, 1 onion, 150 g of sour cream, 125 g of natural yogurt, 1 tbsp. l mustard, salt and freshly ground black pepper - to taste, a mixture of milk and water in a ratio of 2: 1 for soaking the liver, 1 tbsp. l cooking oil for frying.
Cooking:
To prepare a dish of champignons according to this recipe, chopped peeled onions finely. Wash, dry and peel the mushrooms, cut into slices.
Soak the liver in a mixture of milk and water for several hours. Rinse, remove films and ducts, cut into small pieces.

Separate the caps from the champignon caps from the legs. Wipe the hats with a wet towel (but do not wash), slightly salt. Finely chop the legs. Heat 1 tbsp in a pan spoonful of vegetable oil and butter, put chopped legs there and fry for 5 minutes.Add tomato paste, wine, garlic, salt and pepper and keep on high heat for another 3 minutes. Put crackers and parsley.

- For milk sauce: 90 g of wheat flour, 1 l of milk, 90 g of butter, 3-4 egg yolks, salt.
Cooking:
Peel the mushrooms, wash, cut into slices, salt, sprinkle with pepper.
Cooking milk sauce. Pour, stirring continuously, sautéed wheat flour with hot milk, add butter, salt to taste and egg yolks.
Pour the champignons with milk sauce and cream in equal amounts and put the butter. Allow in a sealed container until cooked. Season with lemon juice.
