Honey mushrooms with Korean carrots for the winter

If you want to do something unusual and original for the home menu - make a delicious blank for winter mushrooms with Korean carrots for the winter.

  • Carrots - 1 kg;
  • Honey mushrooms - 1 kg;
  • Vegetable oil - 1 tbsp .;
  • Garlic - 7 cloves;
  • Salt - 1 tsp;
  • Ground red pepper - 1 tsp;
  • Ground basil - 1 tbsp. l .;
  • Ground coriander - 1 tbsp. l .;
  • Vinegar 9% - 5 tbsp. l

This appetizer diversifies your everyday menu and will be a decoration for a festive feast.

Carrots are peeled and washed in water, rubbed on a “Korean” grater.

It is laid out in a bowl, salted and stretched with hands until juice appears, left in the room for half an hour.

Honey mushrooms are cleaned of pollution, washed and boiled in salted water with the addition of 2 pinches of citric acid for 20 minutes. Lean back into a colander and leave in it until all the liquid has drained.


In a deep saucepan, vegetable oil is heated and garlic finely chopped with a knife is introduced, removed from the stove.


Red pepper, coriander and basil are added to the carrots, the garlic butter is poured in and mixed well.

Vinegar flows immediately and mixes well again.

The cooled mushrooms are introduced into the carrots, mixed thoroughly and left for 2 hours at room temperature.


This salad can be eaten after 2 hours. However, if you want to close it for the winter, then take the following steps:

Arrange the mushroom salad with Korean carrots in sterilized jars, cover with metal lids and set to sterilize for 40 minutes.

It is not necessary to roll it up, it is better to close it with tight plastic covers, let it cool and put in the refrigerator.

Cooking salad is not at all complicated and can be a favorite among other salads.

The recipe for honey mushrooms with carrots and onions for the winter will be one of the most delicious and delicious dishes on your table.

  • Honey mushrooms - 4 kg;
  • Carrots - 1 kg;
  • Onion - 1.5 kg;
  • Salt to taste;
  • Tomato paste - 600 ml;
  • Vinegar 9% - 5 tbsp. l .;
  • Vegetable oil - 1 tbsp.

We will clean mushrooms from dirt and the remains of mycelium, rinse and set to boil in salted water for 20 minutes.

Throw it in a colander so that all the liquid in the glass. If there are large specimens, then they need to be cut into pieces.

Peel the carrots, rinse and grate on a coarse grater.

We heat the butter in a pan and lay out the carrots, fry for 20 minutes over medium heat, stirring occasionally.

We peel the onion, cut into half rings, add to the carrots and fry everything together for another 15 minutes over low heat.

We mix vegetables, mushrooms, introduce tomato paste, add the mass, pour the vinegar and mix.

We put the salad in sterilized jars and put sterilized in a pot with hot water for 2 hours.

Roll up the lids, turn it upside down and wrap it in a warm blanket.

After cooling completely, we will take out the jars with honey mushrooms, carrots and onions to the basement.
