Some believe that caviar can only be made from vegetables. However, many experienced housewives call this opinion erroneous. After all, you can make a delicious piece in the form of mushroom caviar.

Almost all types of "forest meat" are suitable for such an appetizer. The main ingredient can also be purchased at a store or market. It will be familiar to us and always available champignons or oyster mushroom. However, many years of experience show that very tasty mushroom caviar is obtained from honey mushrooms.

Caviar from honey mushrooms without sterilization, prepared for the winter, is a real find for busy housewives, who for some reason have no opportunity to stand at the stove for a long time. If you are just such a mistress, then the recipes suggested below will be very helpful.

  • Honey mushrooms - 2 kg;
  • Carrots and onions - 0.5 kg each;
  • Vegetable oil - 400 ml .;
  • Black pepper (peas) - 15 pcs.;
  • Vinegar 9% - 2 tbsp. l .;
  • Bay leaf - 2-3 pcs.;
  • Salt, pepper - to taste.

The recipe for caviar from honey mushrooms without sterilization is very simple to prepare. It is enough to boil the fruit bodies, fry your favorite vegetables, roll them all together through a meat grinder and put out in a common bowl before putting them in jars. And now in more detail:

Clean mushrooms from dirt and rinse with water.


Then boil them for 20 minutes in salted water, removing the foam, fold in a colander.


Cut the onion into small cubes, and grate the carrots on a coarse grater.


Fry vegetables in ½ part of vegetable oil until soft.


After that, pass all the ingredients through a meat grinder and put in a stewing dish.


Add the pepper grains, salt, bay leaf, ground black pepper and the remaining oil.


Simmer for about an hour, stirring constantly, then pour in the vinegar and simmer for another 10 minutes.

  • Vinegar 9% - 1 tbsp. l .;
  • Sugar - 2 tsp. (optional)
  • Salt, black and red pepper - to taste.

We prepare caviar from honey mushrooms without sterilization, guided by the following step-by-step description:

  1. Grind boiled and chilled fruit bodies with a meat grinder.
  2. Dice the onion, fry it in ½ part of the butter and also pass through the meat grinder.
  3. Add to the mushrooms and simmer with the remaining oil in a deep saucepan for about 30 minutes, stirring constantly.
  4. About 10 minutes before the process is complete, add finely chopped garlic, sugar, salt, pepper and vinegar, mix.
  5. Spread the mass on sterilized jars and tightly close with boiled nylon caps.
  6. Allow to cool and safely send to the basement for storage.
