Mushroom soups with noodles: first course recipes

Noodles are often added to soups with champignons - a type of pasta with a flat shape. As with the use of vermicelli, noodles are placed in water or broth brought to a boil. You can cook first courses with pasta in store or make noodles yourself from wheat or rice flour with the addition of water. Aromatic seasonings are added to give the soup a special flavor.

How to cook champignon noodles: simple recipes

Mushroom soup with homemade noodles and mushrooms.

Ingredients

  • flour - 400 g
  • dried champignons - 5-6 pcs.
  • potatoes - 10-12 pcs.
  • carrots - 1 pc.
  • onions - 1 head
  • vegetable oil - 2 tbsp. spoons
  • salt to taste
  • parsley or celery to taste

It is better to make noodles for this soup with champignons on your own, because homemade is much tastier than what you bought in the store, which means that the dish will only benefit from this.

So, for the preparation of noodles, knead the dough from water and flour, cover it with a towel for half an hour, leave it in a warm place.

Then you need to roll the dough thinly, dry it a little on the table and then cut the noodles.

Now you can proceed to cooking the dish itself. Rinse the champignons, peel them, put them in a container with cold water, leave them for 3 hours, then boil them, put them in a colander and let the excess liquid drain. Do not pour mushroom broth, save for cooking soup.

Cut washed and peeled carrots into thin strips, potatoes into cubes and boil together with carrots in slightly salted water.

  • Leek 60 g
  • Chili pepper 1 pc.
  • Udon noodles (boiled) 400 g
  • Vegetable oil 200 ml
  • Sake 80 ml
  • Teriyaki sauce 60 ml
  • Oyster sauce 60 ml
  • Chives 20 g
  • Salt pepper

  • Garlic 1 clove

  • 50 g rice noodles

  1. Pour oil into the multicooker bowl and fry the prepared chopped champignons and chopped onions in the BAKING mode for 10 minutes. After the onions and mushrooms are stewed, lay the chicken meat, cut into thin strips.
  2. Pepper and fry until cooked in BAKERY mode for about 40 minutes. In the last minutes of cooking add soy sauce.
  3. Then put back into the BAKERY mode, only for 20 minutes, and pour boiling water, a little before reaching the limit line.
  4. Put rice noodles in boiling water and cook for 10 minutes.
  5. Chop the cabbage into thin strips. About 2 minutes before rice is ready, add the cabbage. Then bring the soup to readiness in the heating mode for about 1 hour.
  6. Before serving, sprinkle the soup with rice noodles and mushrooms with a small amount of chopped herbs.

Chicken broth noodle and mushroom soup recipes

Mushroom soup with noodles.

Ingredients

  • 200 g fresh champignons
  • 1 onion
  • 1 parsley root
  • 1 carrot
  • chicken bouillon
  • 1 tbsp. a spoonful of butter
  • 60–80 g noodles
  • chopped parsley
  • salt to taste

Peel the onion, rinse under a stream of cold water, cut into rings. Rinse parsley, chop, peel carrots, cut into small slices. All of these components are immersed in a pan with ready-made chicken broth, boil until tender.
