How to cook dried champignons and dishes from them

Dried champignons are part of many delicious dishes based on these mushrooms. Drying is a good way of storage, because having dried mushrooms in the house, you can cook a delicious mushroom dish at any time.

Not all housewives know how to cook dried champignons, and which recipe is best to choose. There are several ways to prepare mushrooms using this method.

For drying, it is best to use cultural specimens, rather than wild ones.

To prepare for cooking dried champignon mushrooms at home, follow this scheme:

  1. Sort out the mushrooms, select only fresh, whole and not spoiled. They can be absolutely any size - both large enough and very small. For drying, specimens affected by larvae or other pests are not suitable.
  2. Mushrooms can not be washed, if they are not very dirty, it is enough to carefully remove from their surface - and hats, and legs, litter, using a clean damp cloth.
  3. Remove the bottom of the leg, evenly cutting it with a knife, because the soil was in contact with this area.
  4. Cut the prepared mushrooms into small pieces or plates - about 1 cm, if desired, smaller or thicker.

Naturally dried mushrooms

When choosing a natural method of this type of harvesting, the mushrooms are dried in the sun, therefore, for this work, you should choose a sunny day. Stick to the following recipe for dried mushrooms:

Prepared mushroom slices string on kapron thread. To do this, use a thick needle to make it convenient to string.

Wrap such mushroom garland once with clean gauze so that insects do not have access to vegetables.

Hang mushrooms in cheesecloth in an open, well-ventilated, sunny place.

In warm and sunny weather, mushrooms in this way will dry in a few days. It is easy to determine the readiness of the product, for this it is enough to bend the hat - it should slightly spring. If it does not spring, then drying should continue, otherwise after a week the product will deteriorate and will have to be discarded.

The ancient method of drying champignons

You can also prepare dried champignons using this ancient method. It is suitable exclusively for those villagers and summer residents who have an old Russian stove in their house.

Drying in an oven is carried out in this way:

  1. Lay prepared mushrooms on a clean and dry baking sheet in a thin layer.
  2. Remove the ash from the stove, put two bricks and place a baking sheet on them.
  3. The oven should maintain a temperature of 60-70 degrees. It is important that the temperature is within these limits, if it is lower, the drying process will be delayed for a long time, at a higher temperature, the mushrooms will burn.
  4. Keep the oven door ajar at all times two-thirds, this will ensure air circulation. By the end of cooking, close the door gradually, since by that time there will be much less moisture in the oven.

Check the preparedness of the mushrooms in the same way as in the previous recipe.

How to dry champignons in the oven

Mushrooms can be dried in the oven. The effect of this method is almost the same as that of cooking them in a Russian oven, but the hassle is much less.

To obtain a fragrant preparation for preparing delicious dishes, stick to this recipe:

  1. Arrange the chopped mushrooms on a clean and dry baking sheet.
  2. Preheat the oven to a temperature of 60-70 degrees and place a baking sheet in it.
  3. Dry the mushrooms with the door open until fully cooked.

Mushroom harvesting in an electric dryer

The most modern and convenient way to make such a workpiece is to use an electric dryer, in which you can dry not only berries, vegetables and fruits, but also mushrooms.

Having such a device at home, stick to such a scheme for drying mushrooms in it:

  1. Put chopped champignons on each pallet of the electric dryer.
  2. Turn on the appliance 55 degrees and dry the mushrooms. This process can take 3-6 hours. To make the preparation faster, you can cut the mushrooms into smaller pieces. It is also recommended that the pallets be swapped periodically.

Some housewives dry the mushrooms to a powder, which is used as a seasoning.

In this case, they need to be dried until they themselves begin to crumble in their hands. Next, you need to grind the dried product into a fine powder using a coffee grinder, add a little salt, mix everything well and store in glass, hermetically sealed containers.

So that the dried billet does not lose its nutritional value, it must be properly stored. For these purposes, gauze or canvas bags should be used, placed in a dry room in a suspended form. It is important that the room is not humid, if the humidity is above 50%, the mushrooms will begin to absorb moisture, which will deteriorate. Do not store mushrooms with fruits and vegetables, otherwise they will nourish their smell and lose their aroma.

Mushroom soups of dried champignons: recipes with photos

Simple mushroom soup.

Most often, dried champignon soup is prepared, which has many cooking recipes.

To prepare such a simple version of the mushroom first course, prepare the following ingredients:

  • 300 g dried champignons;
  • 5 potatoes;
  • two carrots;
  • bulb;
  • butter, sunflower or olive oil;
  • bay leaf, salt, pepper, greens.

Use this recipe for making dried champignon soup:

  1. Soak dried mushrooms in water to make them soft. The duration of this process depends on the degree of dryness of the product. On average, it is enough to soak them for 10-15 minutes.
  2. Soaked mushrooms put in a pan, pour 3 liters of water. Bring to a boil, cook for 20 minutes.
  3. Catch the mushrooms from the broth, and leave the pan itself off the stove.
  4. Discard the boiled mushrooms in a colander so that water comes out of them.
  5. Peel and finely chop the onions and carrots. Put vegetables and mushrooms in a pan with heated oil and fry until golden.
  6. Put the mushroom broth on the fire again. Add fried vegetables and diced potatoes to it. Bring to a boil and cook for 15 minutes.
  7. 5 minutes before cooking, add salt, pepper, bay leaf, finely chopped greens to the broth.
  8. Let the soup brew and serve.

Soup "Mushroom Kingdom".

To make a soup of dried mushroom mushrooms "Mushroom Kingdom", you will need:

  • dried champignons - 100 g;
  • carrots, onions - 1 pc.;
  • potatoes - 5 pcs.;
  • Bay leaf;
  • sour cream - 250 ml;
  • salt, pepper, herbs;
  • vegetable oil.

  1. Dried mushrooms pour hot water and leave for 20 minutes.
  2. Cut the onion into small cubes, grate the carrots. Put these vegetables in a preheated oil pan. Fry until golden, put sour cream at the end and simmer another 5 minutes.
  3. While the onions and carrots are fried, put a pot of water on the fire. Once the water begins to boil, place the diced potatoes and soaked mushrooms in the pan. Let these soup ingredients boil for 15 minutes.
  4. Add the fried vegetables with sour cream, bay leaf, salt, pepper, greens to the broth and let it boil for another 3 minutes.
  5. Remove from stove, pour into bowls and serve.

Mushroom noodle soup.

To prepare such a tasty and satisfying mushroom soup you will need:

  • dried champignons - 150 g;
  • white onion - 1 pc.;
  • carrots - 1 pc.;
  • noodles - 100 g;
  • bay leaves, salt, ground pepper and allspice;
  • refined vegetable oil for frying.

Stick to this photo recipe for cooking soup with dried mushrooms:

  1. Soak dried mushrooms in boiling water for half an hour.
  2. Meanwhile, in salt water, boil the noodles and drop it into a colander so that the glass water.

  • parsley, salt, pepper.

Cooking:

  1. Boil the champignons, drain the water, discard the mushrooms in a colander.
  2. Cut the chicken fillet into small sticks, place in a saucepan, pour 1, 5 liters of water and place on the stove.
  3. When the broth boils, put the mushrooms in it, cook for 15 minutes.
