Hot dish of salted saffron mushrooms: mushroom soup

Do not wait for a special occasion to cook this delicious hot dish of salted mushrooms. In addition, products for mushroom soup can always be found in the kitchen, even at the beginning hostess.

In 40 minutes You can cook a hearty and diet treat.

  • 300 g salted saffron mushrooms;
  • 5 pieces. medium potatoes;
  • 1.5 liters of water;
  • 1 pc. onions and carrots;
  • 2 eggs;
  • 3-4 tbsp. l vegetable oil;
  • 1 PC. bay leaf;
  • 3 peas of black and allspice;
  • Fresh parsley and / or dill.

Spread the salted saffron mushrooms in water and leave to soak for 30-40 minutes.

Let us boil the water mentioned in the recipe, and lay the peeled and diced potatoes.

We peel the carrots and onions, rinse and grind: carrots on a coarse grater, onions - in cubes.

While the potatoes are being cooked, fry the remaining vegetables until cooked.

We take out the salted mushrooms from the water, squeeze by hand, cut into slices and put into the carrots with onions, fry for 15 minutes.

Once the potatoes are ready, transfer the mushrooms and vegetables to the pan and cook for 10 minutes.

Add bay leaf, allspice and black pepper.

Beat eggs with a whisk, combine with chopped herbs and beat again.

Before turning off the fire, gently pour a mixture of eggs and greens into the soup with a thin stream.

Immediately mix, cover, turn off the stove and leave the dish to infuse for 5-8 minutes.

When serving, in each serving (optional) you can put 1 tbsp. l sour cream.


 

What else can you make from salted saffron mushrooms: a delicious salad

The proposed recipe for salted saffron mushrooms with a photo of the final result is quite simple and at the same time universal. Such a delicious salad can be used not only for festive feasts, but also for a regular party with friends.

  • 1 kg of salted saffron mushrooms;
  • 50 ml of freshly squeezed lemon juice;
  • 1 tsp. crushed garlic and black pepper;
  • ½ tsp. dried basil and oregano;
  • 100 ml olive oil;
  • 300 g of cherry tomatoes;
  • 200 g salami;
  • 1 head of leaf fat.

 

  1. Pour the salted mushrooms with cold water and leave to soak for 40 minutes.
  2. Rinse the mushrooms in clean water, squeeze with your hands and put on a kitchen towel to drain.
  3. We are preparing salad dressing: in a plate mix lemon juice, ground pepper and crushed garlic.
  4. Pour dry oregano and basil, pour in olive oil and mix thoroughly.
  5. Cut the saffron mushrooms, put them in a deep bowl, pour the dressing, mix and refrigerate.
  6. Cut the cherry into halves, fry in olive oil for about 3 minutes.
  7. Cut the salami into small cubes, combine with tomatoes and add everything to the mushrooms.
  8. Stir, put in a flat salad bowl, which previously cover salad leaves.

Such a salad can be consumed immediately, but it is better to put it in the refrigerator to insist.

 

Potatoes stuffed with salted saffron mushrooms

Such an exquisite recipe for salted saffron mushrooms is not a fiction at all. It originates from ancient recipes of Russian cuisine.

  • 10 pieces. medium potatoes;
  • 300 g salted saffron mushrooms;
  • 3 pcs. onions;
  • 50 g butter;
  • Vegetable oil;
  • 4 tbsp. l sour cream;
  • Dill and / or parsley.

 

  1. The potatoes are peeled, washed and cut out with a knife core.
  2. Mushrooms are poured and left for 30-40 minutes to leave excess salt.
  3. Cut mushrooms into cubes, combine with chopped onions and fry in a small amount of vegetable oil until golden brown.
  4. Pour sour cream and simmer over low heat for 10 minutes, allow to cool.
  5. Fill the middle of the potato with the minced meat and put in a small baking dish, which is greased with butter.
  6. Put in a preheated oven and bake until the potatoes are cooked at a temperature of 180 °.
  7. The finished dish is poured with melted butter and sprinkled with chopped herbs.
