To prepare a pancake dough on water, you will need the following ingredients:
- 0.5 l of pasteurized milk;
- chicken eggs 1-2 pieces;
- 4 tbsp. tablespoons of wheat flour (with a hill);
- 30-50 g of butter for lubrication;
- 2 tbsp. tablespoons of vegetable refined oil;
- a piece of fat;
- salt and sugar to taste.
The dough can be prepared either manually or with the help of kitchen assistants, for example, a blender. First, put eggs, salt and sugar in a bowl or bowl of a blender and beat well. Then add warmed milk and sifted flour to the container. All the ingredients should be thoroughly beaten until a homogeneous air mass without lumps is added and vegetable oil is added.
The pan must be greased with a piece of bacon or vegetable oil (with a brush) before infusing each new portion of pancake dough. Fry each pancake from two sides and after removing on a plate one top side is greased with butter. Pancakes from such a dough are very tasty and fragrant on their own. To prepare the dough on kefir, you need such products:
- 1 liter of kefir 2.5% or 1% (to taste);
- 1 teaspoon of sugar and the same amount of salt;
- 250 g of wheat flour (sifted);
- 80 g of starch;
- 1 g of baking soda;
- 1-2 eggs;
- 30 ml of vegetable oil.
First you need to mix kefir, egg, salt and sugar in a bowl. In a separate container, mix flour and starch until smooth. Add this dry mass to the resulting mixture of kefir and eggs and mix well.After this, add soda, mix again and add vegetable oil to the mixture.
The resulting pancake dough should turn out to be quite liquid, but you should not be afraid that the pancakes will poorly leave the pan and break. Due to the presence of components such as starch and vegetable oil in the dough, they will simply “jump” from the pan without any effort. Too thick tes should be diluted with kefir. Pour pancakes on a preheated pan with a uniform layer, brown until golden brown.
Choux pastry recipe

To prepare them, you will need the following components:
- 500 ml of kefir 2.5% fat;
- 1-2 eggs;
- 1 tbsp. milk;
- 350-400 g of flour;
- 0.5 teaspoon of salt;
- 1 teaspoon of soda and the same amount of sugar;
- 1-2 tbsp. tablespoons of vegetable oil.
Kefir is heated to a temperature of 40 degrees (so that it is slightly hotter than body temperature), shift it with all components except milk and vegetable oil. Boil the milk and pour in a thin stream with constant stirring into the mixture, mix thoroughly and add vegetable oil.
Cooking the filling for pancakes with meat and mushrooms

- 300 g lean beef or veal;
- 250-300 g of mushrooms;
- 2 heads of white onion;
- vegetable oil for stewing and frying;
- black pepper and salt to taste.
The meat must be prepared in advance, it should be washed, boiled in salted water, cooled and passed through a meat grinder. Wash the mushrooms, dry, cut into slices, put in a heated pan with vegetable oil. Peel the onion, cut into thin half rings, send to the mushrooms. Cool onions with mushrooms and also pass through a meat grinder. Pepper the resulting mass and salt to taste.
Pancakes stuffed with chicken and mushrooms

To prepare it you will need:
- 350 g chicken fillet;
- 200 g of mushrooms;
- onion head;
- half sweet pepper;
- 50 g butter;
- cooking oil for frying;
- pepper and salt to taste.
Wash the chicken fillet, boil and cool. Peel the onion, cut into cubes and sauté on warmed vegetable oil in a pan until transparent. Rinse mushrooms, dry, finely chop and send to the onion, add butter, simmer until tender. Twist the cooled meat and onion-mushroom mixture in a meat grinder and mix until smooth, add salt if necessary.
