Mlecnik is a conditionally edible mushroom of the family Russula. Milk mushrooms owe their name to the content in the pulp of vessels with milky juice resulting from damage to the fruiting body. Common lactarius mushroom and its photo

Hat of the common lactarius (Lactarius trivialis) (diameter 5-22 cm): shiny even in dry weather, with dark rings. It changes color and shape depending on the age of the fungus: in young mushrooms it is dark and bluish, rather convex; the old ones are lilac and brown, and then ocher or yellow, flatter and even depressed. Dense, maybe with small dimples. The edges are wavy, curved, often wrap inward.
Leg (height 4-10 cm): pale gray or light ocher, cylindrical in shape, sometimes swollen, but always hollow. A little mucous and sticky.
Pay attention to the photo of the common lactarius: its plates are frequent, thin (occasionally wide), mostly yellow or cream in color, with rusty spots.
Pulp: thick and fragile. Mostly white, but brownish under the skin itself, and red at the base. Milky juice is very bitter, when interacting with air it changes color to yellow or slightly greenish. It has a peculiar smell resembling a fish one.
Doubles: are absent.
When growing: from mid-July to the end of September.
Where can I find: in humid places and lowlands of all types of forests, most often near pines, spruces and birches. Hiding in dense grass or in moss. An ordinary milkman is not afraid of insect pests.
Eating: fresh or salted, subject to preliminary soaking, to remove the bitterness. When cooking, changes color to bright yellow or orange. It is very popular in preparations from the hostesses of Finland.

Hat of the faded lactic (Lactarius vietus) (diameter 4-9 cm): gray, lilac, lilac or gray-brown, eventually fades to white or grayish. Slightly convex or prostrate. The center is slightly depressed, but with a small tubercle and usually darker than the edges wrapped to the inside. The surface is often uneven. Sticky and moist to the touch, with sticky twigs or leaves.
As can be seen in the photo, the lactic faded has an even, sometimes slightly curved leg. Its height is 5-9 cm. Coloring is white or light brown, lighter than a hat. The form is cylindrical.
Records: thin, narrow and very frequent. The color is cream or ocher, gray at the place of pressing.
Pulp: white or gray, with caustic milky juice. Thin, very fragile.
Doubles: are absent.
When growing: from mid-August to early October.
Where can I find: in deciduous and mixed forests, especially often near birch trees. Prefers moist and swampy places.
The use of the faded milky in cooking is limited - since the flesh of the mushroom is very thin, it is not very popular. Only the largest specimens are salted and pickled.

Brown Lactarius Hat (Lactarius fuliginosus) (diameter 5-12 cm): brown or dark chocolate, fragile, changes shape from convex to strongly depressed. The edges are usually folded. To the touch velvety.
Leg (height 5-11 cm): white or light brown, but at the very base is always white. Cylindrical, velvety to the touch.
Records: frequent, have a pinkish or buffy hue.
Pulp: fragile and whitish, at the cut and when interacting with air, it turns pink. It has a sharp, but not bitter taste, the freshly cut mushroom has a distinct fruit aroma.
Doubles: brown lactarius (Lactarius lignyotus), which has a darker hat and a longer leg.
When growing: from early July to mid-September in the forests of Europe.
Where can I find: in deciduous forests near oaks and beeches.
Brownie is considered to be edible mushroom due to the fact that it is eaten more often than other types. This mushroom is dried and salted, but only after thorough heat treatment. In Russia, it is a traditional component of pickles, and residents of Western Europe consider it unsuitable for consumption.

Brown lactarius mushroom

Hat of brown lactarius (Lactarius lignyotus) (diameter 3-9 cm): dark chestnut or black brown. In young mushrooms, it is convex, often with a small tubercle in the center. Over time, it becomes prostrate, and subsequently depressed. To the touch velvety, occasionally with a small amount of wrinkles. The edges are always wavy and slightly downy.
Leg (height 4-10 cm): solid and solid, cylindrical in shape, often of the same color with a hat or slightly lighter. To the touch velvety.
Records: wide, firmly attached to the hat. Usually white, old mushrooms are slightly yellowish, when pressed, they acquire a distinct reddish tint.
Pulp: white or light yellow in color, on the cut acquires a reddish tint. Milky juice is watery and non-corrosive. There is no pronounced smell and taste, although almost all related mushrooms have a pleasant aroma.

Where can I find: brown lactarius can be found on the acidic soils of coniferous forests.

Edible fungus hygrophoroid milky (Lactarius hygrophoroides)

Hat (diameter 4-10 cm): mostly brown, sometimes with a brown or reddish tint. In young mushrooms, it is slightly convex or flat, and in older ones it is slightly depressed. Dry to the touch.
Hygrophoroid (Lactarius hygrophoroides) leg (height 3-8 cm): dense, slightly lighter than a hat.
Records: descending and rare, white or light cream color.
Pulp: very brittle, white, with white milky juice.
Doubles: a red-brown breast (Lactarius volemus), in which, unlike the hygrophoroid, the milky juice changes color from white to brownish.
When growing: from late June to mid-October in temperate countries of the Eurasian continent.
Where can I find: Hygrophoroid milder can be found only in deciduous forests, most often near oaks.
Eating: in fried, salted and pickled form.

Lactarius mushroom is burning milky (Lactarius pyrogalus)
Category: conditionally edible.
Hat (diameter 4-7 cm): from flesh to olive or cream color. In young mushrooms, round with a pronounced apex, in mature ones, concave with slightly wavy edges. It is covered with mucus, the amount of which increases significantly in humid weather and after rain.
Leg (height 3-7 cm): similar in color to a hat, dense and slightly narrowed. Old mushrooms can be completely hollow.
Records: light yellow, rare and thick.
Pulp: dense, off-white or light gray. When broken, it gives off a very pleasant mushroom smell. The taste is burning, which is why the mushroom got its name.
Doubles of a milky milky milky (Lactarius pyrogalus): lactiferous faded (Lactarius vietus), hornbeam (Lactarius circellatus), neutral (Lactarius quietus) and acute (Lactarius acris). Faded can be distinguished by the purple hue of the hat and the tree next door (growing under birch trees), and the hornbeam grows exclusively under the hornbeams. A neutral milky has a pungent odor and a darker color. In an acute, milky juice blushing in the air, while the juice of a burning red lactarius is white or light yellow and does not darken.

Records: not very frequent, cream color.

Records: quite rare, of the same color with a hat, but a little lighter.
Pulp: white or slightly yellowish, with an island taste. Milky juice is also white, but it darkens noticeably when dried.
Doubles: rubella (Lactarius subdulcis), whose milky juice does not change color.
