Drying oil for the winter at home

Many lovers of mushroom delicacies in winter want to taste not only canned or pickled mushrooms, but also dried ones. Therefore, the question arises of drying oil at home. How to do this so that mushrooms can retain all their nutrients and vitamins.

There are several simple ways to dry the oil. The main point is the realization that in the age of high technology, oil can be dried not only in ropes, like “beads” and in the sun. There are more modern technologies for this: ovens and special electric dryers for fruits and vegetables.

Dried butter for the winter is an excellent “medicine” that prevents the deposition of cholesterol on the walls of blood vessels and promotes good digestion. Dried butter in terms of vitamin PP is very similar to beef and fish liver. The human body can absorb protein oily 85%. In addition, dried oils accelerate the healing process after respiratory infections.

Oil can be dried not only in the open air under the sun. This is done in Russian stoves, over gas stoves, in ovens. But if there is not enough time, and there are a lot of mushrooms, then it is better to use a special dryer that will dry the oil well without any special efforts on your part. Since it often rains in autumn, you can use a combination dryer: first in the sun, then in a dryer or oven.

Do I need to clean the oils for drying: the recycling process

How to start the processing process: is it necessary to clean the oil for drying?

First you need to sort out the mushrooms collected in the forest: throw out the worms and sort them by size. Next, you need to clean the oil from dirt and grass residues. A simple way: take a kitchen sponge, moisten it a little and wipe each mushroom. Do not soak the oil before drying, as they instantly begin to absorb water and become heavy. Oil soaked in water is not suitable for drying.

I must say that drying mushrooms oily does not harm the vitamins that are in them. They have an even more pronounced aroma than freshly picked. At the same time, the oranges do not lose their taste. A variety of dishes are prepared from them, since butter can be combined with many products: any type of meat, cheese, cereals, vegetables, fruits and eggs. From them you can cook roast, sauces, gravy, soups - mashed potatoes, borscht. Dried butter is added to a variety of salads, as the most refined ingredient.

Oven drying in the sun and oven-dried mushrooms for the winter

Most housewives confidently use old proven recipes for drying butter for the winter. For example, for drying in the sun you need to string whole mushrooms or their individual parts on a strong thread. Lubricants should not touch each other. It is better to cover the strung "beads" of mushrooms with a double layer of gauze, protecting the workpiece from dust and flies. In addition, you can build convenient stands from the bars or thin boards where you can hang the threads with mushrooms.

With good weather and sunny days, drying the oil takes 5 to 7 days.If the mushrooms are cut into plates, then the drying lasts 2-3 days. However, it is worth remembering that it is impossible to leave the dried oil in “beads”. A mole can easily get into them, capable of destroying all your work in a matter of days. Therefore, after drying on a thread, remove the oil and transfer to a linen bag or glass jar.

Another simple and affordable way - drying the oil in the oven. This variation has its advantages for apartment residents. The oven copes with the role of a dryer perfectly, it is easy and quick to dry mushrooms, as it is always at hand.

If the butter is large, then it is better to cut them into pieces and put it in one layer on a baking sheet or wire rack. Warm the oven to 60 ° C and insert the mushrooms. It is better not to close the door so that the oil is not baked. With the oven open, good air circulation occurs.

In order not to overheat the butter, from time to time it is necessary to remove the pan and leave for 1.5-2 hours, so that the mushrooms cool. Stir the mushrooms, evaluate how they are dried, and put them back in the oven. Never rush to dry a new batch, as this will harm the quality of the oil if they are not dry. This drying process takes an average of 2 days, depending on the number of mushrooms.

To determine the cooking level of dried butter in the oven, try them by touch. Well-dried mushrooms are brittle and brittle, crumble when pressed. If the oil is under-dried - their structure is soft, elastic and when pressed, they are difficult to bend. Such mushrooms must again be sent to the oven.

Drying oil in an electric dryer, microwave and stove

A quick, economical way is to dry the oil in an electric dryer. Such a technical novelty saves time for any housewife and does not require her constant presence. In the electric dryer there are several baking sheets that can be filled with a large amount of oil.

Large mushrooms should be cut into pieces and lay in an even layer on each baking sheet of the dryer. Set the temperature to 60 ° C on the equipment and go about your business further. The time on the dryer can be selected individually: from 2 to 6 hours.

In the dryer, the mushrooms will be depending on the thickness of the slices. If the oil is cut thin, they will dry faster. Ready or not, you can check 2 hours after turning on the dryer. They are checked as well as when drying in a conventional oven; when pressed, they must break.

If the hostess does not have a special electric dryer for vegetables and fruits, you can use a conventional microwave. In it, the temperature is set at 100 ° C, and the initial drying time of the mushrooms takes only 20 minutes. Then you need to open the door so that excess moisture evaporates (about 10-15 minutes), and continue to dry in the microwave at the same temperature for another 20 minutes.

This option will appeal to those who want to finish the drying process faster.

Perhaps someone does not have modern technology to do oil drying. However, everyone has gas stoves or stoves for coal. You can dry the oil, strung on a rope, at the hot wall of the stove or over a Russian stove. Probably, this method is used only in the remote villages of Russia, although the butter, cooked under these conditions, are distinguished by their unusual taste and aroma.

You can use gas stoves, although it is very inconvenient, because the burners must always be kept lit. However, if there are no other options for drying oil for the winter at home, you can take advantage of this. Keep the mushrooms strung "beads" over the stove, but if you are going to cook, remove the threads to another room. This product loves to absorb all the smells of cooked food. When drying over a gas stove, the process lasts 3-4 days.

One more thing to remember: if the mushrooms become easily broken after drying, grind them in a coffee grinder or on a blender. They will make mushroom seasoning, which can then be used in gravy, mashed soup, as well as to prepare mushroom croutons and zrazy from powder.

Dried butter should only be stored in cloth bags, paper bags or glassware, which will help protect them from moisture, mold and pests.
