Mushrooms broccoli: recipes for first and second courses

Mushroom broccoli are great ingredients for a diet table. Using these ingredients, you can cook both the first and second courses, and also use them as ingredients for cold appetizers and homemade preparations for the winter. If you add cheese or cream to broccoli and champignon dishes, you get a hearty lunch or dinner, and having shown a little imagination, you can make a festive meal from these vegetables and mushrooms.

Ingredients:

Rinse the champignons, finely chop, put in a preheated pan and fry until all the liquid has evaporated.

Rinse the broccoli, divide into small parts, put the fry together with mushrooms.

Salt everything, pepper, mix thoroughly, simmer for 7 minutes.

After this time, add sour cream to this delicious dish of champignons and broccoli and simmer another 5 minutes over low heat.


Fish stew with mushrooms and broccoli in sour cream.

  • 500 r fish fillet of cod and pike perch,
  • 500 g broccoli
  • 200 g of champignons,
  • 2 tbsp. tablespoons of lemon juice
  • 1 onion,
  • 2 tbsp. tablespoons of butter
  • 100 g sour cream
  • 1 bunch of dill
  • black pepper.

To prepare this dish, it is recommended to take lean fish, for this, chum, cod, zander, tilapia, halibut, pollock, pike, flounder and others are suitable. You can take different types of fish.

At the first stage of cooking, vegetables should be prepared. Broccoli divided into small parts, cut into circles about 2 cm thick. Dip the pieces of broccoli in salted hot water, hold for 3 minutes, then transfer to cold water, after 2 minutes, put in a colander to let the glass water. You do not need to pour the broth.

Cut the champignons into 4 parts each, sprinkle 1 tbsp. a spoonful of lemon juice. Cut the onion into thin half rings. Rinse the fish fillet, dry it with paper towels, cut into small pieces with a width of 22.5 cm, sprinkle with the remaining lemon juice. Melt the butter in a deep pan, 3 min. fry the mushrooms. Add onion and cook for another 4 minutes. Pour 100 ml of broccoli broth, add sour cream. Put broccoli in a pan, season with salt and pepper. Gently place the pieces of fish in the middle of the pan. Reduce heat, cover and cook for 7 minutes. before removing from heat. Sprinkle the finished dish with finely chopped dill, garnish with lemon mugs.

Oven baked broccoli with mushrooms.

Despite the simplicity of the recipe, this dish is very tasty and quite suitable to periodically please your family with it, without spending a lot of time and effort on cooking.

Ingredients:

  • 500 g of frozen broccoli;
  • 150 g of champignons;
  • 2 tablespoons of vegetable oil;
  • 1 onion;
  • 1 bunch of green dill;
  • salt.

Cooking method:

  1. Peel the onion, rinse well, cut into rings or half rings.
  2. Rinse dill, chop finely.
  3. Rinse the mushrooms, cut into large slices, toss in a pan and fry over medium heat.
  4. After 5 minutes add the onions to the mushrooms, fry for another 10 minutes.
  5. In the meantime, rinse the broccoli, divide into parts, put in a pot. There, add the mushrooms fried with onions, salt.
  6. Place in an oven preheated to 150 ° C for 20 minutes. When serving broccoli with champignons, cooked according to this recipe, sprinkle with dill.

Broccoli with champignons under cheese.

Ingredients:

  • Broccoli cabbage - 300 g;
  • Champignons - 300 g;
  • Hard cheese - 150 g;
  • Paprika - 1/2 tsp;
  • Vegetable oil - for frying;

Cheese Soup Recipe with Champignon, Potato and Broccoli

To make cheese soup with mushrooms and broccoli, take:

  • Champignons - 5–7 pcs.
  • Processed cheeses - 2 pcs.
  • Broccoli - 200 g.
  • Potatoes - 1-2 pcs.
  • Carrots - 1 pc.
  • Salt to taste.
  • Vegetable oil - for frying.

Cooking:

Cooking:

To process the champignons as follows: remove hard edges from the legs, cut the hats thinly. Peel the ginger, cut into small strips.
  2. Heat the pan with vegetable oil well, put the mushrooms and ginger in it, fry for 3 minutes, then add broccoli, cook for 1 minute.

Remove the broccoli and mushrooms from the fire, drizzle with lemon or soy sauce, salt and sprinkle with sesame seeds.

Chicken with mushrooms, broccoli and cashew nuts.

Ingredients:

  • 2 chicken breasts;
  • 1 PC. onions;
  • 1 bell pepper;
  • 250 g broccoli;
  • 1 zucchini;
  • 200 g of champignons;
  • 60 g cashew nuts;
  • 4 tbsp. tablespoons of vegetable oil.

For the sauce:

  • 3 tbsp. spoons of hot ketchup;
  • 2 tbsp. tablespoons of soy sauce;
  • 1 tbsp. a spoonful of garlic and chili paste;
  • 2 cloves of garlic;
  • 1 tbsp. a spoonful of sugar;
  • 1/4 cup chicken stock.

Cooking:

To prepare the sauce for broccoli and mushrooms with chicken according to this recipe, you need to mix all the ingredients. Then the chicken breast is washed, finely cut across the fibers. Vegetables and mushrooms are cut large, onions and peppers are cut into cubes, zucchini is cut into halves of circles, broccoli is cut into halves of inflorescences, mushrooms are cut into large plates. 2 tbsp. Baked broccoli with champignons.

Ingredients:

  • 450 g broccoli;
  • 150 g pickled champignons;
  • 200 g of cheese;
  • 200 g of cherry tomatoes;
  • 1 tablespoon of vegetable oil;
  • 1/2 bunch of dill, pepper, salt.

Cooking method:

Wash broccoli, divide into inflorescences, blanch in salted water for 1 minute. Wash cherry tomatoes, cut into halves. Cut the cheese into slices. Wash dill, chop. Cut the mushrooms into slices. Grease the baking dish with vegetable oil, put cabbage, mushrooms, tomatoes and cheese in layers. Salt, pepper, put in the microwave, bake at 100% for 2 minutes. When serving, sprinkle with dill greens.

Broccoli, champignons and white wine.

Ingredients:

  • 1/4 cup olive oil;
  • 2 crushed cloves of garlic;
  • ¼ cup finely chopped mushrooms;
  • 5 cups of broccoli cabbage inflorescences;
  • 5 cups of dry white wine;
  • Salt and pepper to taste.

Cooking:

  1. Heat olive oil in a pan.
  2. Fry garlic in oil for 1-2 minutes.
  3. Add mushrooms and fry for another minute.

  5. Pour broccoli with wine and add salt and pepper. Gently mix and cook, without covering, for 3-5 minutes.
  6. Then cover the pan and cook for about 5 minutes, until the broccoli is tender.

Put broccoli on a serving plate, evaporate the remaining broth in half and pour broccoli (6 servings).

Vegetable stir-fry with broccoli, mushrooms and shrimp.

Stir-fry is great for the middle of the week, when you have little time and want to quickly prepare a healthy and healthy dish. Stir-fry allows you to simply open the box with vegetables and quickly use what is at hand.

Ingredients:

  • 1 tbsp. a spoonful of olive or coconut oil;
  • 1 small thinly chopped red onion;
  • 1 finely chopped broccoli stalk;
  • 1 cup finely chopped champignons;
  • 1 red or orange bell pepper peeled, finely chopped;
  • 1/2 cup peas without stalks;
  • 2 finely chopped cloves of garlic.

Marinade:

  • A slice of grated fresh ginger;
  • 1 tablespoon of tamari sauce;
  • 1 tablespoon of water;
  • 1/2 teaspoon mirin (sweet rice wine);
  • 1 teaspoon maple syrup;
  • 1 teaspoon of red pepper flakes;
  • 1 tablespoon of freshly squeezed orange juice.

Cooking:

In a deep skillet over medium heat, fry the onion with coconut oil. Add broccoli, mushrooms, bell peppers, peas, carrots, garlic. Cook for another three minutes. Combine ginger, tamari, water, mirin, maple syrup, red pepper flakes, and orange juice for the marinade. Whip it all together. Let the marinade stand for 2-3 minutes. Then pour it on the vegetables. Serve with brown rice or separately.

Possible options: at the stage of combining with the marinade, add 200–250 grams of peeled shrimp. Fry them for 3-4 minutes until the shrimp has a light pink tint.

Pike perch soup with broccoli, mushrooms, onions, sour cream and herbs "Gdansk".

Ingredients:

  • 150 g of zander;
  • 300 g broccoli;
  • 100 g of champignons;
  • 1 onion;
  • Sour cream, any greens, bay leaves, spices for fish soup and salt - to taste.

Cooking:

Put chopped fish in cold water and cook with onions. Disassemble broccoli into inflorescences, cut the champignons into slices and add to the soup along with bay leaf, spices and salt. Put broccoli on top, pour in water, salt, pepper, cover and continue cooking for 5-7 minutes. Then put the broccoli and champignon salad on the dish and sprinkle with grated parmesan.
