Mushroom Casserole: Lenten Recipes

For many religious people, because of their beliefs, they have to cook lean dishes. However, such food can become appetizing and satisfying if cooked according to the presented recipes. For example, a lean casserole with mushrooms is a simple and tasty home-made dish. The following recipes will be a useful find for those who fast, monitor the slimness of the figure or just want to try something new and unusual.

Lean Potato Casserole with Mushrooms Recipe

To prepare a simple lean potato casserole with mushrooms, you need the following products:

  • 1 kg of boiled potatoes;
  • 0.5 kg of boiled mushrooms;
  • 2 large onions;
  • 4-5 Art. l vegetable oil (for frying);
  • breadcrumbs (or semolina);
  • salt, pepper to taste.

Thick mashed potatoes should be prepared from boiled potatoes.

Cut the onion into cubes of 0.5 cm and put in a pan with hot sunflower oil. Fry until transparent and add chopped mushrooms. Continue to fry until golden brown, at the end add salt and pepper to taste.

Lubricate the baking dish with sunflower oil and sprinkle with semolina or bread crumbs. Put ½ part of mashed potatoes, smooth and put the filling of mushrooms.

Cover the remaining mashed potatoes with mushrooms, level with a spoon, sprinkle with breadcrumbs and put in a preheated oven. Bake at 170 ° C for 35-40 minutes.

Lean vegetable casserole with mushrooms, beans and broccoli

No less tasty and healthy is the following recipe for a lean vegetable casserole with mushrooms. With this option, you can endlessly experiment and adjust to any taste preferences.

Foods for 5 servings:

  • 2 pcs. onions;
  • 1 large carrot;
  • 1 kg of potatoes;
  • 0.4 kg of boiled mushrooms;
  • A mixture of green beans and broccoli;
  • 6 tbsp. l vegetable or olive oil (for frying);
  • 1.5 tbsp. l flour;
  • salt and pepper to taste.

Make mashed potatoes with a thick consistency from boiled potatoes.

Fry finely chopped onions in vegetable oil for 5 minutes.

Grate the carrots with a large division, add to the onion and fry until cooked. Divide into 2 parts, one of which is crushed with a blender and add to mashed potato.

Add flour to the mixture and stir well so that there are no lumps.

In the second part of the fried vegetables add diced mushrooms, a mixture of broccoli and green beans. Pepper, salt to taste and simmer for 15 minutes.

Grease the bottom of the pan with vegetable oil, lay out part of the potatoes, and even out.

Put mushrooms with vegetable mixture on top and cover with the remaining mashed potatoes.

Send the form to the oven preheated to 180 ° C and bake for 30-35 minutes.

Lenten casserole with mushrooms and potatoes in a slow cooker

You can cook a lean casserole with mushrooms and potatoes in a slow cooker, which will save a lot of time, because for this recipe you do not need to make mashed potatoes in advance.

  • 6 medium potatoes;
  • 100 ml of soy mayonnaise;
  • 200 g of boiled mushrooms;
  • 4 tbsp. l vegetable oil;
  • 2 tbsp. l seasoning for potatoes;
  • 1 tsp Paprika
  • Greens for decoration;
  • salt and black pepper to taste.

Cut peeled, washed potatoes into thin slices, put in a bowl, salt, pepper, pour 2 tbsp. l oil and mix.

Grease a bowl of multicookers with vegetable oil, lay layers of potatoes and diced mushrooms, seasoning each layer with soy mayonnaise.

Sprinkle the top layer of the casserole with seasoning for potatoes, cover and turn on the “Baking” mode for 40 minutes.

After the set time, open the lid and leave it in this position for 20-25 minutes, so that the casserole is slightly cooled. Put in plates and season with finely chopped herbs.
