How to cook lean cabbage soup with mushrooms and sauerkraut

We need:

  • 200 g sauerkraut;
  • 5 potatoes;
  • 2.5 liters of filtered water;
  • 1 carrot;
  • 2 onions;
  • 3 tbsp. l vegetable oil;
  • 1.5 tbsp. l wheat flour;
  • 2 cloves of garlic;
  • 2 bay leaves;
  • black pepper (peas);
  • 0.5 tsp Paprika
  • a bunch of any greenery;
  • a pinch of salt.

Squash the cabbage with your hands from the juice, but do not pour out the liquid. Pour cabbage with 1 liter of water, send to a stove and simmer for about 1 hour over low heat.

Cut potatoes into cubes and combine with cabbage. Add the remaining water and cook until half cooked.

Grate the carrots and fry in a pan until cooked, then send to the potatoes.

Put finely chopped onions in a pan, add sunflower oil, 50 ml of water and simmer for 10 minutes.

Dilute flour with 3 tbsp. l broth, break the lumps and pour into cabbage soup.

Send the stewed onion to the pan, followed by pouring paprika, salt, pepper, stir well and let it boil for 20 minutes.

If the acidity is weak, add the juice left over from sauerkraut directly to the pan. Put bay leaf, finely chopped garlic cloves. Boil over low heat for 10 minutes, turn off the stove and let the cabbage soup brew.

The recipe for lean soup with mushrooms can be slightly changed by adding 100 g of tomato paste. She will give the dish a reddish color and slightly change its taste.

Lean soup recipe with mushrooms and fresh cabbage

Cabbage soup can also be made from fresh cabbage. We offer to cook lean cabbage soup with mushrooms and fresh cabbage:

  • 500 g of fresh white cabbage;
  • 300 g of fresh mushrooms;
  • 1 carrot;
  • 10 sprigs of green onions;
  • 2.5 liters of water;
  • 1 lemon;
  • fresh herbs for decoration;
  • 3 cloves of garlic;
  • salt, pepper to taste;
  • vegetable oil (for frying).

Chop fresh cabbage, chopped peeled carrots in small cubes, and cut the mushrooms into slices.

Pour oil into a deep frying pan, add chopped vegetables with mushrooms and simmer over low heat for 15 minutes.

Pour water into the pan, let it boil and pour all the stewed vegetables into it, boil for 10 minutes.

Add squeezed lemon juice, chopped onion branches, salt and pepper to taste, boil for 5 minutes.

Turn off the stove, add finely chopped or crushed garlic to cabbage soup. Insist 10 minutes and you can safely taste it, seasoning each plate with greens.

How to quickly cook lean soup with mushrooms and beans

How else to cook lean cabbage soup with mushrooms, so that they turn out tasty and healthy? In this case, many use a product such as beans. And if you take canned beans, it will save a lot of time and effort.


To quickly cook lean cabbage soup with mushrooms and beans, you need to take:

  • 5 pieces. potatoes;
  • 1 can of canned beans;
  • 1 carrot;
  • 2 onions;
  • 1 stalk of celery;
  • 400 g of fresh champignons;
  • 3.5 liters of water;
  • 5 tbsp. l sunflower oil;
  • 3 pcs. black pepper and allspice;
  • basil leaves;
  • salt to taste.

Wash the peeled potatoes, cut into strips, fry in a pan for 15 minutes.

Bring the water in a pan to a boil and put the fried potatoes there, cook for 15 minutes.

Grate celery and carrots, onions - finely chop. Grind all these vegetables with a mashed blender. Fry the mixture in a pan where the potatoes were fried for 10-15 minutes. Throw everything into the pan, including chopped champignons, boil for 10 minutes.

Grind 1/3 of the bean can along with the liquid with a blender, and then with the remaining beans send to the pan, adding salt and pepper. Boil for 10 minutes, turn off the heat, add basil leaves and let stand for several minutes under the lid.

Lean soup soup with mushrooms and cabbage for a wake

  • 400 g sauerkraut;

  • 2 tbsp. l buckwheat;

  • 4 cloves of garlic;
  • 3 pcs. allspice and black pepper;
  • 3 tbsp. l sunflower oil;

  • a pinch of coriander;
  • salt.

Mushrooms need to be soaked in advance and cook from them 2 liters of broth.

Sauerkraut put in a clay bowl, fill with 500 ml of boiling water and put in the oven, heated to 140 °, for half an hour. After pour the cabbage broth into another dish.

Add dill and coriander seeds to the pan in the oil, heat for 3-5 minutes, but do not fry. Cool the oil, select seasonings from it and discard. Mix oil with cabbage and chopped onions.

Pour buckwheat, chopped potatoes and carrots into small cubes in a hot broth with mushrooms, boil for 30 minutes.

Add cabbage and butter, chopped garlic, onions, bay leaves, grains of peppers to cabbage soup and cook for another 20 minutes until vegetables are completely cooked. Such a recipe for lean soup with mushrooms at the wake can adequately replace any first dish.
