So, we take 2 kg of peeled and boiled butter, and make the marinade mixture. We will need: 1 liter of filtered water; 120 ml of vegetable oil; 130 ml of 9% acetic acid; 35-40 g of salt, 120 g of sugar; 3 medium garlic heads; 4 cloves of cloves; black pepper kernels; Bay leaf. Peel the garlic, grate or squeeze through a press. In a container with water, we throw all the components of the marinade, except for vinegar and garlic. We send it to the stove and wait for it to boil, and then we throw the mushrooms with the remaining components. We boil over low heat for 7-10 minutes, remove from the stove and set aside to cool. We fill the sterilized jars and, clogging the lids, we send to the basement.
Another option for preserving butter for the winter with garlic is as follows: for 1 kg of pre-boiled mushrooms you need to take: 750 ml of water; 2 bay leaves; 3 kernels of allspice; 9 peas of black pepper; 6 tsp 9% vinegar; 3 tbsp. l granulated sugar; 1 tbsp. l salt. We will also need garlic, dried basil, coriander seeds, chili peppers, and horseradish root.
In a pan with water, throw salt, sugar and cook for 5-7 minutes. Next, pour the vinegar and immediately send the oil there. Boil for 7-10 minutes and add the remaining seasonings to taste, including grated horseradish root, crushed garlic, coriander, basil, and finely chopped chili. After boiling the mushrooms in brine, remove from the stove. We spread the oil in the jars, distribute the remaining fill and roll up.
Garlic Butter Caviar Recipe
Another way of seaming for the winter is caviar from butter with garlic. To cook this dish you need to take: 2 kg butter; 1.5 liters of water; 8 pcs onions; 100 ml of 6% vinegar; fresh young leaves of horseradish (1 sheet per jar); 1 small head of garlic (for each jar); sunflower oil; sugar and salt to taste.
We cut the boiled butter in advance into several parts. We pass the chopped onions in a preheated pan. Combine the mushrooms with onions and grind with a blender, or pass through a meat grinder. Stew the prepared mass for 15 minutes, add the remaining spices, except for garlic, and simmer for 10 minutes. In each sterilized jar at the bottom, lay a young leaf of horseradish and crushed garlic, then fill with caviar. On top of the mushroom mass also distribute the green leaf of horseradish and roll.
