Freezing and storing ceps in the refrigerator

The process of storing ceps in the refrigerator can be divided into two stages: before preservation and after it. In the first case, the mushrooms are kept fresh for no longer than 2 days. In the second case, if freezing is carried out, the ceps can be stored in the refrigerator for several years. But you need to follow certain rules. For example, before storing ceps in the refrigerator for a period exceeding 2 days, they must be boiled in salted water. This allows you to suppress the fermentation processes and prolong the shelf life of mushrooms up to 4 days. But the temperature should not increase more than up to +5 degrees Celsius. Before storing fresh porcini mushrooms in the refrigerator, they must be carefully sorted, rinsed in running cold water and absolutely all garbage removed. Foliage, grass, needles from the forest should not get into the refrigerator, where food is stored.

If it is not possible to process the mushrooms on the same day (although this is not recommended!), They are stored for one night (no more!) In peeled form, but not chopped. The maximum shelf life of porcini mushrooms in the refrigerator is very short - no longer than 48 hours. Mushrooms are left in a basket or transferred to a flat dish and, without closing, stored in the refrigerator. Of course, the best place in the refrigerator is its lower part with a temperature of + 2- + 4 ºС. Mushrooms to be cooked can be poured with cold water. Soaking dishes should be wide and low. Before further processing, the mushrooms should be sorted and removed once again, individual wormholes, spots and other injuries that were not noticed before, which during storage have increased so much that most of the fungus will become unusable.

If a lot of juice has formed during frying, it is better to store mushrooms in small jars (0.5 l). We must not forget that any liquid that has undergone rapid freezing expands. This means that the containers with mushrooms cannot be overfilled, there should be free space in them. In the process of frying, do not add too much vegetable oil.


Also, you do not need to salt the mushrooms, put spices, seasonings. This can be done already when cooking, guided by the recipe and your taste preferences. Before frying the mushrooms, they should be pretreated: peeled off earthen lumps, herbs, in some species, remove the legs, rinse several times in cold water, and then dry it by spreading it on a towel, preferably in the open air. Mushrooms prepared for freezing are laid out in plastic bags or gastronorm containers, divided into portions, each of which will be used in its entirety.

Is it possible to store porcini mushrooms in the refrigerator

The answer to the question of whether porcini mushrooms can be stored in the refrigerator depends on the degree of culinary processing of raw materials. If these are frozen mushrooms, then the shelf life is very long. Frozen mushrooms, like vegetables and fruits, are not recommended twice. In the freezer, they are stored for 6 months or longer. If necessary, it is better to chop the mushrooms without defrosting, and put in a pan. For cooking, you can dip them into the pan as a whole. Boiled mushrooms are also frozen by cooking them in their own juice or with broth.

If you decide to boil them in water and make a broth, first boil the liquid and salt it - this will help preserve the aroma and taste.

Mushrooms are boiled for 10-25 minutes, counting the time from the moment of boiling. Boil in your own juice - the same as fry without oil. Moreover, almost all the nutritional properties of the product are preserved. Mushrooms are cleaned and thoroughly washed, and then spread in a deep frying pan and put on a low-power fire, adding very little water. If the volume of mushrooms has decreased three times - they are ready. This usually occurs after 15–20 minutes from the start of cooking. The boiled mushrooms are cooled and distributed in jars, poured with the resulting juice and placed in the freezer.
